Favorite Tool - #1 Zojirushi Bread Machine

One of my favorite tools in my kitchen is my bread machine!  I use the dough setting to make it easier on myself when I am trying to keep up with all of my other duties!  I also use it to make sweet breads and this very delicious herbed bread.  

 This is a Zojirushi brand and works so well. Model number bbcc-v20 I love it.  I have had a few others along the way and this is by far, the best!  

It makes a vertical loaf instead of the horizontal most machines make.  I love that it will mix a large batch of dough to make 2 loaves, then I put the dough in the bread pans and bake in the oven after they rise.

Or, I can make the loaf from start to finish in the bread maker itself!  The dough cycle is so versatile though!
Here is a great and flavorful recipe for herbed bread.  It is a light loaf that pairs well with fish dishes or chicken dishes!

~Herbed Bread~

2/3 cup of milk (I usually use rice milk)
1 egg
1 tsp of salt (I use sea salt)
3 Tbsp coconut oil
2 Tbsp Sucanat
2 cups flour ( yesterday I used all purpose white but I usually use hard red whole wheat freshly ground)
2 tbsps each of basil, rosemary and sage. More to taste if you like a stronger bread
1 1/2 tsp yeast

I put it all in the bread machine and let it do the mixing. Then I pulled it out and formed it into a loaf, let it rise until doubled and baked until done at 350*. Usually we put this in the bread machine and push sweet/light and let it do the baking.

  3. That bread sounds delicious! I need to get me a bread machine. Where do you recommend I look?

    1. Try the thrift stores! They are usually unused because no one makes fresh bread anymore! Make sure it has a dough cycle if you want that. I got my Zoju machine at the thrift store! Score!!!
