{ Granola Bars! }

This is adapted from several different recipes I have collected over the past few years.  I wanted a granola bar snack for my children that was mostly a good-for-you-mama thing and I like how this turned out.

*Granola Bars*

2 cups of oats (I used fresh rolled oats bought in bulk in a 50 lb bag.  You can use regular rolled oats.)
3/4 cup of organic sucanat ( You can use packed brown sugar if you don't have this.)
1/4 tsp cinnamon
3/4 cup of coconut
1 cup whole wheat flour (I am pretty sure you can use regular all purpose flour but I don't have that.)
3/4 cup of chocolate chips (opt.)
3/4 tsp sea salt

1/2 cup of honey
1 beaten egg
1/2 cup of peanutbutter or nut butter of choice (you can leave this out but then add 3/4 cup of oil instead of 1/2 cup)
almost 1/2 cup of coconut oil
1 tsp of vanilla extract
(I usually warm the honey, peanutbutter, and coconut oil together in a saucepan on low heat then add to dry ingredients and the beaten egg.)

Preheat oven to 325*.  Grease a 9 x 13 pan.
In a large bowl mix dry ingredients then add honey, egg, nutbutter, oil and vanilla extract.  Mix well.
Pat mixture in pan.  Bake for 25 minutes or until the edges begin to turn light brown.
Cool for 5-7 minutes and cut into bars.  Cut into bars while still warm though so they don't crumble!  Makes about 18 bars depending on how you cut them.

 I usually add flax seeds on the top when they come out of the oven.  You can also add chia seeds or chocolate chips.  I usually leave out the chocolate chips because it has enough sweetness in it as it is!
