{ Pizza Night }

I love pizza night!  Homemade pizza is even better because I can control exactly what goes in and on the pizza!  Dough and all!







My favorite recipe for dough:

2 cups warm water
2 Tblsp sugar (your choice, I've used sucanat, pure organic cane sugar and honey!  The sweetner is to activate the yeast.)
2 Tblsp yeast

 Put in a large mixing bowl and let it sit and proof for a bout ten minutes.  After ten minutes it should be bubbly, but if not, that is okay too because you are just looking for a little poof to your dough.  Not for it to rise like a bread dough. 





Add:

2 Tblsp olive oil (your choice again, I've used olive, canola, coconut and red palm oil)
1 1/2 tsp salt
5 cups of flour (I have used half einkorn/half wheat, all wheat, all kamut, and white all purpose over the years!)
Preheat oven to 400*

Mix well.  Then knead until it is a ball.  5 to 10 minutes depending on the flour.  Cover and let rise.  Roll out on 2 pizza pans.
Now you can bake them a little or just go ahead and add sauce, cheese and toppings.  I love to sprinkle garlic powder and salt around the crust before putting on the sauce. Also, a tip, after you put everything on it, sprinkle italian seasoning, salt, pepper, onion powder and garlic powder over it!

Bake for 10 to 12 minutes or until crust bottom is like you like it!
