{ Einkorn Baking }

I have been baking with Einkorn for about 6 months and most of the time this grain does well and produces a good loaf but sometimes it is a bit testy.  I recently ordered the book Einkorn: Recipes for Nature's Original Wheat to see if I could learn anything more about this wonderful wheat grain and also to make some other things with the Einkorn.

I started with, surprise, surprise, the Dairy-free Brown Bread recipe. I let my bread machine do all the work for me and it came out delicious as usual! In the book, the author gives settings for the bread machine to help this bake well, so those are the settings I followed. The loaf did not rise and round as my usual loaves do but I am okay with that. It will make a good sandwich bread.

I also used the recipe in the book to make a sourdough starter! I will let you know how it comes out in a few weeks! I am hoping it does well.

 I have baked sourdough before and used a starter from Azure standard. We loved the pancakes and chocolate cake with that but I wanted to try the Einkorn and making it from scratch.

  1. Sounds interesting! I have not tried einkorn before but the sourdough version has my attention! :)
